You'll see chip shops littering all over the old part of amsterdam. I'm sure many of these shops have avid fan followings, and each one has their own fan following. This particular shop is a small little chip shop that has been there since the late 1800s. In the 1950s, they started serving the fries with sauces, and this is the version that you see today. You get 3 size options, and about 20 sauce options


I was lucky enough today to have to wait at the front of the counter. That means, I got the first serving from a fresh batch. They are exactly as you want a good chip to be - crispy outside, soft and sauce absorbing on the inside. I doused mine with mayo and spicy (by Dutch standards) ketchup. Good combo. Nice pick up as you meander through the streets of the old city, or gawk at transactions going on in die wallen.

This place is not particularly instagrammable, which is a good thing. It keeps the annoying crowds away, and only those who just want good chips and mayo show up at the counter. On this particular visit, I had a lady on a wheelchair behind me making the trek up the windy side streets to get here, and she was happy to tell me how this is still her favorite frites place in town after all these years.

Pro tip - ask for the sauces in separate containers... it keeps the fries from going soggy as you get to the bottom of your cone of chips.
